Now that Spring is officially upon us, the fresh air is inspiring us to be more active and curate a healthy lifestyle. Health Coach Michelle Gindi, of Buddha Bowls and Burpees, shares some recipes for the family – served in style of course – with Laura Ashley kitchen accessories.

Michelle is a holistic health and family wellness coach that loves to inspire families to get healthy together! Her recipes, like this delicious Grain Free Carrot Cake, are easy to make and let us enjoy our favorite sweets with a little less guilt!

I love all the flavors in this Carrot Cake. This is a super easy blend and bake recipe and the only thing necessary is a high speed blender or decent processor. This recipe is inspired by Whole Food Simply’s Carrot Cake, but I’ve reduced the sweetener and it is still very sweet.

Grain Free Carrot Cake

  • 1 cup almond flour
  • 1 cup unsweetened shredded coconut, plus extra to top the cake
  • 1 large banana or 1 1/2 small bananas
  • 1 large or 2 small carrots
  • 4 dates, pits removed, soaked in hot water 10 minutes
  • 1 tbsp water to thin mixture
  • Sprinkle of cinnamon and a splash of vanilla, optional

Preheat oven to 350. Process or blend carrots to create thin shreds. Add the rest of the ingredients and blend all together. Mixture will be very thick. Spoon mixture into a parchment lined loaf pan (I used 2 small paper loaf pans). Bake 40 minutes and allow to cool well before removing from pan.

Note: this is a thick dense Cake. It will not fluff up.

Don’t forget the veggies!

I used to assume that by now every single human being has tried cauliflower rice. After all, brands like Green Giant and Trader Joe’s are selling the cauliflower already riced in every grocery store! Last week, my sister in law called me asking “How do I make cauliflower rice?” which got me thinking that maybe there is someone else out there in the world that also hasn’t yet made cauliflower rice. So for anyone out there curious about this trend, get on this recipe, it is so easy and so fantastic!

Cauliflower Rice Pilaf

  • 1 head cauliflower, grated in a processor or by hand in a box grater (I am a cauliflower rice snow and only like it grated by hand)
  • 1 onion, chipped
  • 1 clove garlic, minced
  • 1 handful parsley
  • sprinkle, red pepper flakes
  • squeeze lime or lemon juice
  • salt, to taste

Saute the onion, garlic and pepper flakes over medium heat tin a large saute pan. Add cauliflower, and cover to cook about 10 minutes. When soft, remove from heat and cover with kitchen towel. When ready to eat toss with…

There are plenty of recipes to follow but how do you make the time? I take Sundays to meal prep for the week. You can combine ingredients to prepare simple, healthy snacks and lunches on the go. Here are four salads ready to go plus string beans, quinoa, mushrooms and kabocha squash. There wasn’t enough room in this picture to add the other stuff I just made including Japanese sweet potatoes, lentils and white beans. Hopefully, that should tide me over for the next few days!
