Delicious Triple Chocolate Brownie

We have a yummy, melt-in-your-mouth treat in store for you! Try our delicious triple chocolate brownie recipe, with three delicious chocolate layers and a hazelnut crunch. This recipe was provided by our chefs at the Laura Ashley The Tea Room at The Cornwall Hotel, Spa & Estate, located in Tregorrick, England.

BROWNIE LAYER 1

-4 eggs
-1 3/4 cups fine sugar
-16 oz. dark chocolate
-1 1/2 cup unsalted butter
-2 vanilla pods
-3 Tbsp cocoa powder
-1 tsp baking powder
-3/4 cup of plain flour
-7 oz. hazelnuts + 7 oz. chopped dark chocolate to fold in at the end

Method

In a pan, bring the milk and cream to a boil while whisking the egg yolks and sugar in a separate bowl, until thick and pale. Add the milk and cream from the pan slowly into the bowl containing egg yolks and sugar while whisking, then return all back to the pan and cook on a low-medium heat for 3-4 minutes. Melt chocolate into the mix. Sieve the mix and pour this onto the brownie layer. Bake (leaving room for the glaze layer) at 300 degrees Fahrenheit for 20-25 minutes.

CHOCOLATE CREAM LAYER 2

-3 1/2 cups of milk
-3 1/2 cup double cream
-10 egg yolks
-7 oz. fine sugar
-32 oz. dark chocolate broken into pieces

Method

Bring to boil the milk and cream, in a pan, whilst whisking the egg yolks and sugar in a separate bowl until thick and pale. Add the milk and cream from the pan slowly into the bowl containing egg yolks and sugar while whisking, then return all back to the pan and cook on a low-medium heat for 3-4 minutes. Melt chocolate into the mix. Sieve the mix and pour this onto the brownie layer. Bake (leaving room for the glaze layer) at 300 degrees Fahrenheit for 20-25 minutes.

CHOCOLATE GLAZE LAYER 3

-2/3 cup water
-2/3 cup fine sugar
-2 oz. cocoa powder
-1 cup double cream
-4 gelatin leaves
-1 1/2 oz. dark chocolate

Method

Bring sugar and water to boil. Add cocoa powder and cream. Simmer for 5 minutes. Add gelatin leaves and dissolve off heat. Pour onto chocolate. Stir to melt and cool before pouring onto brownie. Set in fridge.

Once the brownie has set, slice into bite size pieces and arrange on a pretty Laura Ashley plate with other colourful desserts to create a masterpiece of edibles. Garnish with fresh-cut flowers from the garden and Voila! This is a guaranteed party-pleaser and perfect for any summer soiree! Enjoy!
